homemade cinnamon almond butter

confession: i've only been to the grocery once in the past three weeks. i've been making everything at home with real ingredients and honestly, it's been life-changing.

to be completely transparent, i had a total meltdown after going food shopping because customers were not abiding by the six foot rule that we are currently living by in this crazy time. and thus i decided to buy a bunch of non perishables to make my own breads, hummus, nut butters, milk, granola etc.

let's get to the goods...

i kid you not, this is the best almond butter i've ever tasted; i will never again buy almond butter in a jar. plus! it's completely palm oil free, which means together we can save rainforests and orangutans.

what you need:

2c raw almonds

2-3 medjool dates (depending on your sweet tooth)

1 tsp vanilla extract

2 tsp cinnamon

set oven @ 350 F

lay flat your raw almonds on a pan + roast for 10 minutes

transfer to a food processor or high speed blender

the mixture is going to first look like almond flour. when this happens, add in your medjool dates, cinnamon + vanilla. then continue to blend until you get the creamy consistency of almond butter. it takes a few minutes so be patient!

option to add raisins before transferring your almond butter to a mason jar or glass container.

store in the fridge for use on toast, in smoothies, or with fruit. easy right?! enjoy.

ps. all of the ingredients above can be ordered on amazon. no need to go to the grocery if you don't desire the trip!
