almond milk + almond pulp energy bites

happy wednesday! hope you are all enjoying your week and this beautiful weather. i can't believe it's already fall! although the halloween and thanksgiving decor have been out and plentiful for months now in new york. are you more of a summer person or do you get excited for autumn, pumpkins, boots and sweaters? i love autumn when it arrives, but i'm never quiet ready to give up my flip flops and cut offs.


this week i ran out of almond milk; i thought i had some paint milk in my pantry as back up but nope, nothing left. and i absolutely will not have coffee without a milk, so i decided to make my own like i used to: soaking the almonds over night, adding them to a blender with water, stevia and vanilla and blending it all up. if you've ever made your own almond milk, which ihighly suggest you do because it's so much ebtter than store bought! then you know after straining through a cheesecloth these is quiet a bit of pulp left. i've used the almond pulp as flour in baking many times but i wanted to try out something new and honestly, faster. so i add the pulp back into the blender with some yummy goodness i had in my fridge and vualá! almond pull energy bites. i even had a non vegan taste test just to be sure they are as good as i think...



so here's what you'll need:


1c almond pulp

1c pitted dates

1/2c dried coconut

2tsp cacao powder

1tsp coconut oil

1 slice of orange


blend the ingredients in a high speed blender or food processor (preferred) and them make the mixture into small balls to serve.


then just add toppings of your choice! the toppings i use are coconut flakes or cacao powder for more of a truffle look.


i've been really into making my own milks, granolas, even nutella so there will be plenty more recipe posts to come! stay tuned.
